Gluten Free Crispy Meatballs Potato and Pine Nuts

Ingredients

3 medium potatoes, grated

5 tablespoons Look Out Here I Come garlic olive oil

1 tablespoon pine nuts

1 1/8 pound ground beef

1 teaspoon salt

1/4 teaspoon ground black pepper

1 small onion, grated

1 slice cornbread, crumbled

1 clove garlic, sliced

1/4 bunch fresh parsley, minced

1/4 bunch thyme

1 egg

Directions

Grate the potatoes and cook with 2 tablespoons Look Out Here I Come garlic olive oil over medium heat. Sauté the pine nuts with 1 tablespoon olive oil over medium heat.

Gently knead together the ground beef, salt, pepper, cooked potatoes, pine nuts, grated onion, minced parsley, thyme, egg, and crumbled cornbread.

Take 1 tablespoon at a time from the meatball mix and roll to shape your meatballs. Heat 2 tablespoons of olive oil and sliced garlic in a pan over medium heat, brown both sides of the meatballs, and serve.
